Paleo Hamburger Helper Mexicana

This recipe was inspired by a similar recipe from my friend Joe. I was feeling like huevos rancheros tonight and my wife was craving Joe's unnamed recipe. We wanted to keep it paleo, so the end product is a mixture of scaled-down huevos rancheros meets paleo Hamburger Helper.

Paleo Hamburger Helper Mexicana

2 lbs of grass fed ground beef
2 cups of chopped mixed peppers (I used frozen)
1 hot pepper (diced very small)
1 zucchini (diced)
1 tbsp of onion powder
1/2 tbsp of garlic powder
Black pepper to taste

Coat the bottom of a large frying pan or wok with 2 tbsp of olive oil. Turn the heat to medium and add the peppers once the pan is hot. Cook just the peppers for two minutes. Add the ground beef and use a large spoon to break the meat up into chunks.

Add the onion powder, garlic powder and black pepper. Occasionally stir everything in the pan and continue to chop up the beef into smaller pieces. Cook the beef until it has browned and then add the zucchini. In a separate frying pan, cook your eggs sunny side up (as shown in the picture to the right).

Spoon the beef mixture onto a plate, add as much guacamole or avocado as you like, and top with the fried eggs. Given the ingredients, this is a meal you could have for breakfast, lunch or dinner.
